About four years ago, I found this recipe for banana bread. It is one of my favorite treats and I have made it countless times.
This Chocolate Chip Banana Bread has a great banana flavor and an almost pudding-like center.
I love how great my house smells when I bake it. It all mixes together in one bowl, so there aren’t a ton of dirty dishes either.
Here’s the recipe:
- 3 frozen very ripe bananas
- 1/2 cup sugar
- 1 egg
- 1 1/2 cups whole wheat flour (white works too)
- 1/4 cup oil
- 1 teaspoon baking soda
- 1/4 cup mini chocolate chips (big chips work too, and make it extra decadent)
- Preheat oven to 375 degrees and grease a loaf pan.
- Microwave the bananas for 2 minutes.
- Peel the bananas.
- In a medium-sized bowl cream together the banana, sugar and egg.
- Stir in the flour, oil and baking soda.
- Pour mixture into loaf pan.
- Add the chocolate chips and mix into the center of the loaf. (this prevents the chocolate chips from burning on the outside of the loaf)
- Bake for 40 minutes or until top looks set.
