Vegetarian ‘Meat’ Loaf

I was craving some comfort food and I found this recipe for Vegetarian Nut Loaf. I searched for a veggie meat loaf recipe for a while. A lot of them have way too many ingredients. Others have hard to find ingredients. I finally found this recipe on Allrecipes.com: Vegetarian Nut Loaf. The reviews looked good so I gave it a try.

I don’t have a high power food processor, but if I did, this recipe would be a breeze.

2 large onions, finely chopped

1 cup chopped fresh mushrooms
1/4 cup finely chopped green pepper
2 tablespoons butter
3 cups grated carrots
1 1/2 cups chopped celery
5 eggs, beaten
1/2 cup chopped walnuts
1/4 cup unsalted sunflower kernels
1/2 teaspoon salt
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon pepper
3 cups soft whole wheat bread crumbs

  1. In a non-stick skillet, sauté onions, mushrooms and green pepper in butter until tender. In a bowl, combine the mushroom mixture, carrots, celery, eggs, walnut, sunflower kernels, salt, basil, oregano and pepper. Stir in bread crumbs.
  2. Coat a 9-in. x 5-in. x 3-in. loaf pan with non-stick cooking spray, then line with waxed paper (I used parchment paper).
  3. Transfer vegetable mixture to a prepared pan. Bake at 350 degrees F for 1 hour or until a meat thermometer reads 160 degrees F Let stand for 10 min before slicing (I didn’t wait).

I ate it with a little ketchup, but it would be awesome with some mashed potatoes.

    • I don’t remember what meatloaf tastes since I haven’t had it in over 20 years :)

      I think meatloaf is probably a lot greasier. The nuts and eggs and breadcrumb provided a meaty texture, but you could taste the vegetables too – especially the onions.

      I liked it and would definitely make it again. It would be good with some sauteed mushrooms on top.
